With the evaporation device an unnecessary drying of the food is to be avoided or delayed by the humidity is regulated within the heat display cabinet.     The invention achieves the stated object in that the evaporation device comprises a trough arranged below the receptacle for receiving water to be evaporated, to which a water level sensor and preferably a rise chimney for the steam passing past the receptacle are assigned.
    In the heat showcase is a water-filled tub under which there is an electric heat source for heating the water. If the water is heated, steam rises through the preferably several rise chimneys in the showcase room with the products. The water level sensor comprises, on the one hand, a float assigned to the tub and a sensor element and, on the other hand, a display-side sensor element, the two sensor elements of the water level sensor interacting in a contactless manner. One of the sensor elements has a magnet and the other sensor element has a magnetic sensor, in particular a reed sensor. The raising chimney is provided in particular in the area of the back of the showcase, which forms a steam curtain in the area of the back of the display cabinet, in particular when the rear glass cabinet door is open, which is intended to prevent the goods from drying out.
    The water level sensor preferably comprises a two-armed lever which can be fastened detachably to the tub, one arm of which is associated with a float and the other arm with a sensor element. The float with the one sensor element releasably attached to the tub, wherein the float floats on the water surface and gives an immediate indication of the level in the tub. With such a construction, a particularly safe construction of the level sensor is ensured, since even with a calcification of tub and float always a safe sensor signal can be delivered. This in particular, because the sensors can not come into contact with water and calcify. The sensors comprise a magnet which oscillates outside the trough on the lever and, depending on the fill level, triggers contactless contacts which are assigned to the heat vitrine, in particular the trough receiver, ie a receptacle in the heat vitrine into which the trough can be inserted. A direct connection to a central water pipe is of course also possible. If a minimum level is reached, the water supply is started. At a maximum fill level stopped again. If a manual filling is to be carried out, the fill levels can be displayed via acoustic signals or visual displays.
    The receptacle may comprise a basin which can be inserted into the heat showcase. Additionally or alternatively, the receptacle may be a telescopically, preferably vertically movable between an upper and a lower presentation position, preferably heatable, goods belonging to the showcase. Thus, the height of the goods in the heated display case can be freely selected depending on the type of goods. For maintenance purposes, it is recommended that the goods support is inserted into a frame with which the goods support is vertically displaceable between the upper and the lower presentation position and against the goods support to a Florizontalachse, preferably spring assisted, between the presentation position and a maintenance position is displaced.
